The Santoku – Your Everyday Kitchen Workhorse
The Santoku is a Japanese-style chef’s knife and one of the most versatile knives you can have in your kitchen. The word Santoku translates as “three virtues” or “three uses”, traditionally referring either to the three foods it is designed to handle, meat, fish and vegetables , or the three key tasks it performs: chopping, slicing and dicing.
Originally, the Santoku was developed as a universal kitchen knife, bringing together the qualities of three traditional Japanese knives: the Deba, used for fish, the Nakiri, designed for vegetables, and the Gyuto, the Japanese equivalent of a chef’s knife for meat. The result is a wonderfully versatile knife that can tackle almost anything you throw at it.
What makes a Santoku different?
One of the defining features of a Santoku is its distinctive ‘sheep’s-foot-shaped tip’. Unlike a traditional European chef’s knife, the blade has a much straighter cutting edge with a tip that curves down gently towards the board. This makes the Santoku particularly well suited to a clean, controlled up-and-down chopping action, rather than the pronounced rocking motion often used with a European chef’s knife.
Modern Santoku knives also commonly feature fluting along the blade, and it’s not just there for aesthetics. These small hollows create tiny air pockets between the blade and your food, helping to reduce the vacuum effect that can cause ingredients to stick to the side of the knife. Less food sticking means fewer interruptions, cleaner cuts and faster prep, something professional chefs particularly appreciate.
Which Santoku is right for you?

Think swede, butternut squash, pumpkin, melons and pineapples, anything where having that extra blade length makes the job easier. The key is choosing a knife that’s the right size for what you’re cutting. You want the blade to do the work, not your wrist.
Then there’s our 5″ Santoku: light, nimble and incredibly comfortable in the hand. It sits beautifully between a utility knife and a full-sized chef’s knife, making it ideal for smaller food preparation and anyone who prefers a lighter blade. It’s particularly popular with our female customers who can sometimes find larger chef’s knives cumbersome.
