Asian Cleavers

Asian Cleavers – A Cook’s All-Rounder

An Asian cleaver, often called a Chinese chef’s knife, looks like a heavy cleaver but acts more like a chef’s knife. It slices, chops and scoops with ease.

It is a favourite with home cooks who want one knife for most tasks.

What is an Asian cleaver?

An Asian cleaver has a tall, rectangular blade with a thinner edge than a meat cleaver. It is designed for slicing vegetables, meat and herbs, rather than cutting through bones.

Why choose asian cleavers?

  • Versatile: slices, dices, chops and crushes.
  • Big blade: carries chopped food straight to the pan.
  • Great knuckle clearance: the tall blade protects your hand.
  • Efficient: do most prep with one knife.

How to choose the right knife

Blade weight. Lighter ones are for slicing, heavier for chopping.

Size. Standard blades are around 18–20cm long.

Handle. Choose a comfortable grip.

Edge. Thin edges are for vegetables and meat, not bone.

How to use it

  1. Hold the handle with a pinch grip, with your thumb and forefinger on the blade.
  2. Push the blade forward through food.
  3. Use the flat of the blade to crush garlic and ginger.

Caring for your knife

  • Dry straight away and avoid bones to keep the edge in good shape.
  • Avoid the dishwasher, which can dull the edge and damage handles.
  • Store it safely in a knife storage solution such as a block, magnetic strip or sheath.
  • Use a wooden or bamboo board. See our cutting and cheese boards.
