Chilled Melon Soup with Crab by Etch Food

Ingredients

2 Water Melons
4 tbsp Natural Yoghurt
150g Crab Meat
Half a Shallot
Half a Granny Smith (peeled & diced)
4 Coriander Leaves
1 tsp Wholegrain Mustard
2 tsp Mayonnaise
1 Squeeze of Lime
Salt & Pepper

Preparation

  1. Halve the melons and cut them up into chunks
  2. In a blender, mix the melon together with the yoghurt, 6-7 ice cubes and a tiny pinch of salt
  3. Pass the mixture through a sieve and put it into a bowl in the freezer (to chill) while you prepare the crab
  4. Put the crab meat into a bowl and run your fingers through it to remove any pieces of shell
  5. Add the shallot, apple and chopped coriander to the crab meat, then stir in the mustard and mayonnaise to bind the mixture together
  6. Add the lime juice and salt and pepper to taste

To Serve

Place a large dollop of the crab meat in the middle of a bowl. Pour the chilled soup around it and garnish with some coriander leaves. Enjoy.
