BBQ Smash Burgers & Sauce by Simon Marshall
Ingredients
For the Burgers
- 500g 20% fat Steak Mince
- Salt & Pepper or rub seasoning
- 4 Cheese Slices (optional)
- 4 Brioche Burger Buns
For the Sauce
- 4 tbsp Mayonnaise
- 1 tbsp American Mustard
- 1 tsp Sugar
- 1 tsp Paprika
- 4-5 Pickled Cornichons chopped
- 1 tsp pickle juice from Cornichons
- Pinch of salt
Method
For the Burgers
- Generously season your mince and divide into 4.
- Gently form the mince into rounds.
- Put the mince onto the griddle, place parchment paper over it and press down firmly with your burger press (you can use an iron skillet or heavy spatula if you don’t have a press).
- Remove the parchment paper and cook for 2 minutes.
- Flip the patty over, add your cheese if using, and cook for a further 1 minute or to your liking.
- Place in a Brioche bun, add burger sauce and serve.
For the Sauce
- Start by adding the mayonnaise, mustard, and paprika into a bowl.
- Roughly chop the cornichons and add to the mix.
- Next add the pickle juice, brown sugar, and a pinch of salt.
- Mix together well, taste, and adjust seasoning if required.
